Cass Vineyard and Winery is located in the rolling, oak-studded hills between Paso Robles and Creston on California’s beautiful Central Coast. This area that the vineyard calls home offers quiet serenity for the visitor and an ideal growing environment for wine grapes. Cass Winery focuses on Rhcne and Bordeaux varietals.
Cass was recognized as the ‘Winery of the Year’ in the 2015 Central Coast Wine Competition.
Plump apricot, golden apple, spiced pineapple and honeysuckle envelop the senses. The richly surprising palate features concentrated flavors of ripe nectarine, pressed peach and coconut custard which balance neatly against a refined acidity. A perfumed finish, delicately infused with sun-kissed citrus, cherry blossom and notes of gingerbread pleasantly linger.
Castoro Cellars sources grapes almost exclusively from their Estate Grown, sustainably farmed vineyards. Nearly all of their fruit comes from within the Paso Robles AVA. They select their grape sources carefully, matching vineyard location with the grape variety that thrives in that particular setting and employing vineyard techniques that produce the desired characteristics of each varietal.
All Castoro’s estate grown vineyards employ sustainable viticulture practices. The winery is 100 percernt estate grown and the name Castoro Cellars is now associated with a long list of premium wines, with a special focus on Paso Robles Zinfandel and Cabernet Sauvignon.
2015 Cabernet Sauvignon
You will agree that Paso Robles is Cabernet Sauvignon country after enjoying this amazing wine. Our Cabernet Sauvignon is packed with rich berries, ripe plum, crushed cherry, and strawberry preserve aromas. Vanilla-chai nuances from both American and French oak frame the fruit. This broad-shouldered Cabernet Sauv is ready to drink now, but also has formidable aging capacity.

2016 Côtes-Du-Rôbles Rouge
The 2016 Côtes-du-Rôbles marks our new Winemaker, Chris Eberle’s first rendition of a red Rhône blend. This medium bodied wine captures aromas of dried cherries, cranberries, and forest floor, while the palate is filled with ripe strawberry and rhubarb compote wrapped up in rustic tannins. The Côtes-du-Rôbles is a perfect example of a bistro wine that is elegant and well-balanced.
Still Waters Vineyards
Still Waters Vineyards originally developed as a dream of Paul and Patty Hoover to own a small one-acre vineyard. Their small dream grew into a large reality of about 60 acres producing ten varieties of premium central coast grapes.
The wine making process at Still Waters is a year-round art with a commitment to the vines. Soils rich in limestone and shale balanced with loams and clay provide good drainage and proper nutrients for growing grape vines. The ranch is located on hills that slope gently from the north to the south, giving the vines the perfect exposure to the summer sun as it rises and sets in the El Pomar district.
Also located on the vineyard is a 100 year-old olive orchard that yields a mixture of Mission, Sevillano and Ascolano olives, pressed using an Italian mill that combines the best of traditional and modern methods.
2016 Sauvignon Blanc
Lively and fragrant with great acidity, this wine has flavors of grapefruit, pear and green apple. Fermented in stainless steel allowing for its fresh crisp style.
Tablas Creek Vineyards
Tablas Creek Vineyard follows the centuries-old Châteauneuf-du-Pape tradition of blending, to produce wines that balance richness and elegance, while ensuring complexity, freshness, and minerality. Winemaking techniques, including dry farming, native yeast fermentation, and the use of large, neutral French oak foudres for aging allow our wines to reflect authentically the grapes, place and vintage from which they come.
2015 Patelin de Tablas Blanc
The 2016 Patelin de Tablas Blanc is intensely Rhone-like on the nose, with notes of nectarines, pineapple, jasmine, and sweet spice. In the mouth, it’s electric with passion fruit, peach pit, and lime zest flavors, saline and crushed rock on the mid-palate, with mouth-watering acidity softening into creamy richness on the finish, leaving lingering flavors of sweet spice. Drink now and for the next 2-3 years.

Tobin James Cellars
Tobin James Cellars rustic wine tasting stop was once an old stagecoach stop. It offers a one-of-a-kind experience that will surely please your palate as well as the “cowboy” in you.
Known for an array of red wines, including ten different Zinfandels, Tobin James Cellars produce 35 other varietals including Chardonnay, Sauvignon Blanc, Riesling, Syrah Rose, Sangiovese, Merlot, Syrah, Cabernet Franc, Cabernet Sauvignon, some Bordeaux blends, and wines from Tempranillo and Primitivo grapes. They also have a late harvest sweet Merlot and a Sparkling wine. A three room guest house is available on the premises for wine club members. For picnicking, there are a few tables out in front under the palm trees.
2014 Chateau le Cacheflo
Tobin James “Mediterranean Blend”: Our “cash flow” is a red blend with a Mediterranean flair. A blend of Sangiovese, Syrah and Barbera. On the nose, fruit forward casis, blackberry, jammy, spices like nutmeg, vanilla, tobacco box and cedar. On the palat, a WOW at first sip, red and dark fruit, well-balanced, robust, mouth-watering medium acidity. A cherry finish with fruit softening and delicate wood appearing.
